FIELD: food industry.
SUBSTANCE: invention relates to food industry and represents a method for production of preserved compotes. Method provides for recipe components preparation, oyster plant cutting, drying in microwave field at preset process parametres, frying and milling, frying barley, oat and rye grains, mixing of oyster plant, barley, oat and rye grains, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of peaches and syrup, sealing and sterilisation.
EFFECT: method allows to reduce boiled fruits content in the finished product and extend its storage life.
