FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, dandelion roots cutting, drying in microwave field at preset process parametres, frying and milling, frying barley and rye grains, mixing of dandelion roots, barley and rye grains, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of raspberries and syrup, sealing and sterilisation.
EFFECT: method allows to reduce boiled fruits content in the finished product and extend its storage life.
