FIELD: food industry.

SUBSTANCE: invention is related to the food industry, mainly meat and canned compote production. Method provides for recipe ingredients preparation, cutting, drying it in microwave field at preset process parametres, roasting and milling of oyster plant, barley malt roasting, mixing of oyster plant and barley malt in mass ratio of 7:3, extraction of the obtained mixture by drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of wild strawberries and syrup, sealing and sterilisation.

EFFECT: invention makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life.
