FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe ingredients preparation, cutting dandelion root, drying it in microwave field at preset process parametres, roasting and milling, barley malt roasting, mixing of dandelion root and barley malt in mass ratio of 7:3, extraction of the obtained mixture by drinking water at preset process parametres, obtained extract filtering. Syrup is cooked out of it. Grapes and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life.
