FIELD: food industry.
SUBSTANCE: invention is related to technology of preserved compote production. The method provides for recipe components preparation, dandelion root cutting, drying in microwave field at preset process parametres, frying and milling, barley grain frying, mixing of dandelion root and barley grain in a weight ratio of 7:3, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of grapes and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled berries in the end product, extend the product's storage life.
