FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method provides for mixing of dry ingredients and water, making dough. Dough contains by weight from 31% to 50% of nut pieces, from 10% to 30% of wheat flour, from 10% to 40% of starch, from 2% to 10% of wheat gluten and from 20% to 32% of added water. Then sheet is shaped from specified dough, and is cut into multiple pieces. Then specified piece is exposed to thermal treatment, and snack chips are produced with moisture content from 1% to 2% by weight.
EFFECT: invention makes it possible to produce natural snack chips based on nuts with crumbly crispy consistency, visible pieces of nuts and improved structural integrity, making it possible to transport product with minimum breakage.
