FIELD: food industry.
SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves preparing recipe ingredients, extracting dill seeds with liquid nitrogen with corresponding miscella separation, cutting yacon, drying it in a microwave field at preset process parametres and roasting it. Rosehips, apples, pears are dried in microwave field at preset process parametres and dried up by convective method, barley grain is roasted. Then yacon is mixed with rosehips, barley grain, apples and pears. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen.
EFFECT: method enables to obtain flavoured coffee drink instant powder out of unconventional raw material according to nonwaste technology.
