FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for cutting scorzonera, drying it in microwave field as preset process parametres, frying and cryomilling in liquid nitrogen, frying barley malt. Scorzonera and barley malt are mixed at a weight ratio of 7:3. Extraction of the obtained mixture with drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of black currants and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled berries in end product.
