FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe components preparation, dandelion roots cutting, drying in microwave field at preset process parametres, frying and milling, barley malt frying, mixing of dandelion roots and barley malt at a weight ratio of 7:3, obtained mixture extraction with drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of blackcurrants and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled berries in the end product, extend the product's storage life.
