FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. The compote production method provides for recipe components preparation, dandelion root cutting, drying in microwave field at preset process parametres, frying and milling, oat grain frying, mixing of dandelion root and oat grain at a weight ratio of 7:3, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of raspberries and syrup, sealing and sterilisation.
EFFECT: invention enables producing of compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
