FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. Recipe components are prepared. It is cut and dried in microwave field at preset process parametres. Oyster plant is roasted and milled. Acorns and nut kernels are roasted and milled. Barley and oat grains are roasted. Oyster plant, barley grains, oat grains, acorns and nut kernels are mixed. Obtained mixture is extracted with drinking water at preset process parametres. The produced extract is filtered. Syrup is cooked out of it. Plums and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows reducing boiled fruits content in the finished product and extending its storage life.
