FIELD: food industry.

SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for recipe components preparation, yacon cutting, its drying in microwave field as preset process parametres, frying and mincing acorns, frying barley grains and soya. Girasol-sunflower, barley grains, acorns and soya are mixed. Obtained mixture is extracted with drinking water at preset process parametres. The produced extract is filtered. Syrup is cooked out of it. Strawberry and syrup are packaged, vacuum-sealed and sterilised.

EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
