SUBSTANCE: group of inventions relates to technology for production of flour confectionery products. The method provide for preparation of formula components, cutting of chicory, its drying in microwave field at specified parameters of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Then one performs production of dough from prime wheat flour, flour produced from chicory using described technology, yolks, salt, soda, vegetable oil, phospholipids and water taken as per specified ratio, its moulding in the form of sheets and baking. One performs cutting scorzonera or oyster plant or dandelion roots, their drying in microwave field at preset parameters of the process, frying and cryo-milling in liquid nitrogen to produce flour, its mixing with culinary fat, dry milk, sugar powder and waffle crumb to produce filling and shaping of waffles from sheets and filling.
EFFECT: waffles have improved texture, coffee taste and flavour with no coffee added to the formula.
