FIELD: food industry.

SUBSTANCE: invention relates to chemical and pharmaceutical and food industries and deals with a method for processing commercial Japanese sea cucumber (Cucumaria japonica) and a biologically active product produced by this method. The method involves milling cucumaria skin-muscular sac, its extraction with 96% ethyl alcohol under heating conditions, the extract separation, repeated extraction of the residue, supernatant separation by way of centrifugation and the extracts combination. Then the cucumaria tissue residue is air-dried at room temperature and vacuumised. Then the tissue residue is milled during 3-5 hours and strained through a sieve till the end product particles size is no more than 0.08 mm. The produced product has hepato-protective properties and contains the following basic components (wt %): protein- no less than 70, carbohydrates - 4.5-4.9, calcium - 1.5-1.9, sodium - 0.9-1.3, magnesium - 0.5-0.9, potassium - 0.2-0.6, alcohol - no more than 0.5%, moisture - no more than 10% and ashes - no more than 8%.

EFFECT: invention allows to more completely process a valuable biological raw material as well as manufacture a new product (being a source of indispensable amino acids and food fibres) used for prevention of toxic liver diseases.
