SUBSTANCE: inventions group relates confectionary industry and may be used in manufacture of dietary flour confectionary products for nutrition of diabetes patients. The methods envissage preparation of the recipe components, cutting of scorzonera, its drying in the microwave field under the specified process parameters, frying and cryo-grinding in liquid nitrogen to produce flour; the dough is prepared from prime grade wheat flour, scorzonera flour produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water. One performs shaping dough in the form of sheets and baking. One performs extraction of orange peel with liquid nitrogen with separation of according miscella, cutting girasol or girasol-sunflower or yacon or chicory or scorzonera or oyster plant or dandelion root, its/their cutting, its drying in microwave field with specified parameters of the process, frying, impregnation with separated miscella with simultaneous increase of pressure, pressure drop down to atmospheric one with simultaneous freezing of raw materials and its cryo-grinding in the medium of released nitrogen to produce flour; its mixing with culinary fat, sweetener "Sladex" and waffle crumb to produce a filler. Making waffles from sheets and filling.
EFFECT: invention makes it possible to produce diabetic waffles that have improved texture and coffee taste and flavour with no coffee added to the formula.
