FIELD: dairy industry.

SUBSTANCE: invention relates to the dairy industry and is intended for determination of free fat (ff) in liquid dairy products. The proposed method considers the preparation of a concentrated solution of sodium hydroxide (1N), stirring the milk volume of 10.77 ml, 10 ml of alkali solution in butyrometer, FF allocation by heating the mixture in a water bath for 15 minutes at a temperature of 63-67 and centrifugation for 15 min at 1200 rev / min, and FF definition by following formula wherein FFF - content of free fat in the product, %; F1 - quantity of the fat in the sample on a scale butyrometer,%; F2 - total fat content in a sample of the product, %; K - conversion coefficient from table 1.

EFFECT: invention provides a high reproducibility of results with low relative error accelerate and simplify the definition of FF in the liquid milk-based products.
