FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. The ice cream production composition contains whole and powdered cow milk, sweet butter, sugar sand, a stabiliser, drinking water and a functional iodine-containing additive. The functional iodine-containing additive is represented by feijoa fruits milled and mixed with sugar in an amount of 1:1. The components are used at the following ratio, wt %; whole and powdered cow milk - 63.4-65.7, sweet butter - 13.5-13.6, sugar sand - 8.2-8.4, feijoa fruits - 3.0, stabiliser -0.2, drinking water - balance.
EFFECT: invention allows to enhance ice cream quality, impart functional properties to the produced ice cream which is natural and useful.
