SUBSTANCE: invention can be used in the production of functional ice cream. The proposed fermented milk ice cream contains whole cow's milk, whole cow's milk powder, amaranth seed flour, crystalline sugar and water. Moreover, the ice cream additionally contains cream made from cow's milk, yoghurt starter with bifidobacteria, urbech made from coconut pulp and banana puree. The initial components are taken in a certain mass ratio.
EFFECT: invention is aimed at increasing nutritional and biological values, resistance to melting, as well as expanding the range of products.
