FIELD: food industry.
SUBSTANCE: invention relates to a method for grain- or starch-based waffles production by way of extrusion including stages as follows: ingredients mixture preparation, the mixture delivery into the extruder and the mixture boiling, the mixture extrusion after boiling to form an extruded non-planar structure increased in volume, the structure straightening to form a large extruded sheet, subjecting the extruded sheet to stretching/extension, the sheet thickness adjustment to produce a sheet with the required thickness, the sheet drying and division into waffles of the required size. The invention also relates to grain- or starch-based waffles produced in accordance with the above method and a line for such waffles manufacture.
EFFECT: proposed invention usage will enable enhanced efficiency of flat grain-based waffles manufacture.
