FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages selection of caviar, its washing and treatment before salting, draining, subsequent washing in a cooled saturated salt solution and draining. After selection ovulated caviar combined with ovarian liquid is washed and treated with a cooled colloidal solution the disperse phase whereof is represented by a complex forming agent and a tanning substance. The complex forming agent and the tanning substance are represented by food tannins.
EFFECT: invention allows to improve quality of caviar products of ovulated caviar of sturgeon fishes.
