FIELD: pisciculture.
SUBSTANCE: invention relates to fishery and can be used for producing granular, pasteurised granular, or pressed caviar from ovulated roe of sturgeon species. The method includes obtaining roe, fixing the shell, the resulting semi-finished products are packaged in a polymer container with a weight of no more than 1 kg under vacuum and frozen at a temperature of minus 40°C to minus 30°C, the frozen semi-finished products are stored at a temperature of minus 18°C for up to 14 months. When producing finished products to order, the frozen semi-finished products are held at a temperature of 0 to (+2)°C until full defrosting and processed into finished products.
EFFECT: improved quality of intermediate frozen semi-finished products and provided required organoleptic characteristics in the subsequent production of finished caviar products.
