FIELD: food industry.

SUBSTANCE: multi-sectional vacuum-and-sublimation drier with flow-cyclic action contains a vacuum pump, a desublimator, a vacuum chamber consisting of tightly connected sections representing a shell having a crosswise baffle made of a heat-conductive material and dividing the section into two cavities; the section cavities are connected to each other via a nipple with a locking valve; each section is additionally equipped with a nipple with a locking valve installed with the possibility to connect to the desublimator and the vacuum pump; the novelty consists in the fact that the crosswise baffle made of a heat-conductive material may be designed as positioned at an angle in relation to the shell axis, the angle determined from formulae sin α = π D 2 4 S ,       ( 1 ) (1), where D -shell diameter, m, S - sublimation area, m2 sin α = H h 3 + h 4 + h 5 + 2 h 6 ,          ( 2 ) (2), where H - distance between the surfaces of sublimation and desublimation, m, h3 - desublimate height, m, h4, h5 - structural dimensions for the nipples connection, m, h6 - structural dimension for connection of the sections to each other.

EFFECT: water steam desublimation process intensification and the product layer destruction prevention.
