SUBSTANCE: invention relates to food industry. Proposed is an antimicrobial composition containing an antimicrobial compound with formula (I), where R1 is a fatty acid chain; R2 is a linear or a branched alkyl residue having 1 - 12 carbon atoms; n is an integer from 0 to 10; X- is selected from among Br-, I-, Cl- and HSO4 - and an antimicrobial product. The antimicrobial product is chosen from the group including: lantionin bacteriocins, Camellia sinensis tea extract, Humulus lupulus L.hop extract, grape peel extract, grape seed extract, Arctostaphylos uva-ursi extract.
EFFECT: invention ensures food products protection and their spoilage prevention.
