FIELD: food industry.
SUBSTANCE: invention relates to food industry, to production of functional food additives for bakery and confectionary industries. The method envisages a complex usage of raw materials in the form of pumpkin grating wastes - peel and coarse pulp particles and pumpkin seed shells with weight fraction of dry substances in the raw materials equal to 30% and 10% respectively. They are dried in an infrared drier (till dry substances content is equal to 10%) where microbiological stabilisation and maximum preservation of vitamin value of the raw materials being dried are ensured under infrared radiation action. Then one performs further mixing and milling till powdery condition with particles sized no more than 200 mcm and subsequent packing into a consumer container. In the process of manufacture of 100 kg of pumpkin powder one performs mixing of the following components: pumpkin grating wastes - 97, pumpkin seed shells - 3.
EFFECT: invention is aimed at production of pumpkin powder of secondary raw materials of pumpkin paste production which allows to recommend it as a biologically active additive for bakery and flour confectionary products enrichment with carotene, pectin substances and cellulose.
