FIELD: food industry.
SUBSTANCE: method provides the preliminary obtaining of grating residues from frozen berries, with the subsequent obtaining of a semi-finished berry product. The proposed method for obtaining supplies provides mixing the grating residues with sugar at the ratio of 1:1, adding citric acid in an amount of 10% of the total mass of the grating residues, packaging by cold filling in sterile containers and sealing. The finished product is stored at the temperature of 18±2°C and the relative air humidity of 75%.
EFFECT: method of obtaining supplies from the grating residues of berry raw materials allows preserving the biological active substances of the initial raw material and the organoleptic characteristics in the resulting semi-finished product, and using food industry waste for further use.
