FIELD: food industry.
SUBSTANCE: invention relates to food industry. Proposed is a fruit filler for food products containing a fruit-containing component, a stabiliser and whey hydrolysate. Additionally proposed is a method for the fruit filler production including production of a mixture containing a fruit-containing component and a stabiliser, such mixture pasteurisation and cooling. Additionally added to the mixture is whey hydrolysate produced from dairy whey by way of its sequential nanofiltration and/or ultrafiltration, dialysis and hydrolysis with the help of an enzyme. The mixture cooling is performed through its vacuumising.
EFFECT: group of inventions enables production of a sucrose-free product with preservation of vitamins, improved consistence and extended storage life.
