FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of preserves for alimentation of upper secondary school age children. One describes a method envisaging recipe components preparation, bulb onions cutting, sauteing in vegetable oil and chopping, fresh white cabbages shredding, freezing and chopping, potatoes cutting, par-blanching and chopping, silver carp fillet, couch shell meat and wheat bread chopping, the listed components mixing with a dry concentrate of whey protein, salt and CO2 - extracts of Chinese magnolia vine and allspice to produce mince, the mince moulding, mealing in wheat crumbs and frying in vegetable oil to produce cutlets, ground pumpkin seeds extraction cake pouring with drinking water and maintenance for swelling, the extraction cake mixing with sour cream and tomato puree, the mixture cooking to produce a sauce, the cutlets and sauce packing, sealing and sterilisation.
EFFECT: method ensures reduction of the manufactured target product adhesion to container walls.
