FIELD: food industry.
SUBSTANCE: invention relates to the technology for production of fish-and-vegetable preserves. The method envisages recipe components preparation, small ordinary fish, ide and pike mealing in wheat flour, frying in vegetable oil and mincing. One blanches and mills potatoes, cuts, sautes and mills part of bulb onions and mixes with part of salt and part of black hot pepper to produce mince. The mince is moulded and fried to produce cutlets. One cuts, sautes and mixes fresh white cabbages, carrots and another part of bulb onions to produce garnish. One proceeds with the remaining bulb onions cutting, sauteing and milling, wheat flour sauteing, ground pumpkin seeds extraction cake pouring with drinking water and maintenance for swelling. One mixes the listed components with tomato paste, drinking water, sugar, the remaining salt, the remaining black hot pepper, allspice, cloves, coriander and laurel leaf; one proceeds with cooking the mixture and addition of acetic acid to produce a sauce. The cutlets, garnish and sauce are packed, sealed and sterilised.
EFFECT: invention allows to reduce the manufactured target product adhesion to container walls.
