FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. The method for sterilisation of pulpy apricot juice with sorbitol envisages four-stage heating of the preserves in 60, 80 and 100°C water for 4, 4 and 4 minutes respectively and in 110°C calcium chloride solution during 12 minutes. One performs subsequent four-stage cooling in baths with water in the reverse order during 4, 4, 4 and 4 minutes respectively with subsequent cooling in 40°C water bath during 5 minutes. During the whole heat treatment process the jars are turned upside down with a frequency equal to 0.133 s-1.
EFFECT: method ensures saving heat energy and water, the process duration reduction and the ready product quality enhancement.
