FIELD: food industry.
SUBSTANCE: invention relates to a fruit-and-berry confiture sterilisation method. The method envisages putting jars with fruit-and-berry confiture (after sealing) into the carrier and staged heating of jars in baths filled with 60, 80 and 100°C water during 5, 5 and 10 minutes, respectively, and the jars cooling in the same baths filled with 80 and 60°C water during 5 and 5 minutes with continuation of cooling in another bath at water temperature equal to 40°C during 6 minutes. During the heat treatment process, the jars are turned upside down with a frequency equal to 0.133 s-1.
EFFECT: method ensures the process duration reduction, preservation of biologically active components of raw materials used, simplification of the method implementation process and the method implementation apparatus structure.
