FIELD: chemistry.
SUBSTANCE: claimed invention relates to a starch-based emulsifying product. The emulsifying product contains semi-ether of starch and alkenyl-succinic anhydride. The semi-ether of starch and alkenyl-succinic anhydride possesses water fluidity not higher than 75. The semi-ether of starch and alkenyl-succinic anhydride is obtained by a method of creating disperse phases. The method of creating disperse phases includes stages of solubilisation with further modification by alkenyl-succinic anhydride. The following condition should be fulfilled. An experimental "oil-in-water" emulsion with the semi-ether of starch and alkenyl-succinic anhydride as an individual emulsifier is prepared. A weight ratio of the semi-ether of starch and alkenyl-succinic anhydride to oil in the emulsion constitutes 1:4. The emulsion contains oil in an amount of 20 wt %. Not more than approximately 5% of particles of the said emulsion oil have a size larger than 1 micron after 24 hours at 57°C estimated by means of differential intensity of polarisation together with elastic light scattering. The Brookfield viscosity of the experimental emulsion constitutes less than approximately 2000 cP after approximately one week of storage at 5°C estimated by means of the Programmed Brookfield Viscometer DV-1.
EFFECT: invention makes it possible to obtain the emulsifier, which forms an emulsion, stable in long-term storage.
