SUBSTANCE: method of producing a nutritional powder containing fat, an emulsifier, digestible carbohydrates and a protein material, involving the following steps: a. obtaining a liquid containing a digestible carbohydrate and an emulsifier in water by successively or simultaneously adding the digestible carbohydrate and an emulsifier to water at temperature of 50 °C to 90 °C; b. providing a fatty ingredient containing at least one fat; c. combining liquid and fat ingredients to produce a primary emulsion; d. performing a homogenisation step for homogenising the primary emulsion to form an emulsion; e. spray drying the emulsion obtained in step d to obtain a base powder; where the emulsifier is a starch substituted with octenyl succinic anhydride (OSA-starch), where the fat content in the base powder is 32–70 wt. % in terms of total dry weight of base powder, wherein free fat content is less than 3 wt. % in terms of total fat weight, g. adding one or more dry ingredients by dry mixing to obtain a nutritional powder, where the nutritional powder is a first level milk mixture, milk mixture of the second level or milk mixture of the third level, where the nutritional powder contains 40–60 wt. % of the base powder, where the nutritional powder contains 95–100 wt. % of amino acids in terms of total amount of protein material. Nutrient powder containing: 40–60 wt. % of base powder, where base powder contains fat, digestible carbohydrates and emulsifier, wherein fat content is at least 32 wt. % in terms of total weight of basic powder, content of free fat is less than 3 wt. % in terms of total fat weight, and the emulsifier is OSA-starch; and one or more ingredients selected from the group consisting of digestible carbohydrate, protein, hydrolysed protein, peptide, amino acid, indigestible carbohydrate, biotic, vitamin and mineral, where the nutritional powder is a first level milk mixture, a second level milk mixture or a third level milk mixture, where the nutritional powder contains 95–100 wt. % of free amino acids in terms of total amount of protein material. Nutrient powder is used in prevention of allergy, in reduction of degree of manifestation and treatment of allergy, in prevention of metabolic disorders, in reduction of degree of manifestation and treatment of metabolic disorders.
EFFECT: invention reduces content of free fat in powder obtained by spray drying, and formation of end products of enhanced glycation and blocking of lysine in powder obtained by spray drying; improve organoleptic properties of powder produced by spray drying.
