FIELD: food industry.

SUBSTANCE: method envisages raw materials supplying with a screw from the bin into the separation zone for dividing in terms of quality and produced mince and bone residue discharge. Mechanically deboned meat separation and dividing are performed in the process of raw materials passage through a multizonal filter with holes of different diameter in every zone. The device contains a body with a charging bin, a screw for raw materials supplying and ensuring pressure in the separation zone, a perforated filter installed on the screw, an adjusting mechanism, nipples for mechanically deboned meat discharge, a valve for bone destruction and bone residue discharge. Along the whole length, the filter is designed to be multizonal and adjoined directly to the charging bin side wall. Clearance adjustment between the screw and the valve is performed due to the screw movement relative to the valve. The bridge breaker is installed in the bin; roundish shape guides are positioned on the bin inner wall.

EFFECT: method ensures production of several fractions of mechanically deboned meat of varied quality in the same device simultaneously, deboning technological process simplification, reduction of expenditures on equipment manufacture and service, enhancement of the quality of the manufactured products and the products losses exclusion.
