FIELD: agriculture. SUBSTANCE: method involves processing of meat-and-bone material after boning of carcasses mainly of cattle, placing it into sealed container, filling with water and delivering live steam into container at a pressure of 1.5-5 atm. Heat treatment is conducted for at least 3 h with subsequent thorough sealing, holding the material in broth produced without the escape of steam for at least 6 h, and drying. The resulting powder is a high-quality protein product containing at least 94.5 % protein with 27 aminoacids, minerals (phosphorus, calcium, sodium), ash and fats. EFFECT: higher efficiency. 6 cl
