FIELD: agriculture.
SUBSTANCE: during drying topinambur it is washed, sorted, inspected, calibrated, cleaned, cut into cubes, blanched, sulfitated and treated with the drying agent in a dense layer in two stages: first at the variable, and then at a constant temperature. The drying agent is used as air with a temperature not exceeding 90°C. The drying stages are demarcated by the critical humidity of topinambur. The device for drying topinambur comprises a hopper, drying and cooling chambers, inclined louvered sieves, chain-and-slatted conveyor, a heat generator, a cooling fan, and an additional heat generator which is connected to the cooling fan.
EFFECT: use of the group of inventions enables to improve the quality of the product obtained.
