FIELD: food industry.
SUBSTANCE: inventions group relates to food industry, in particular, to a device and a method for removal of residual fat remaining on the poultry carcass tissue after the poultry carcass passing through a scraping device for removal of tissue connections between the poultry fillet part or fillet parts and the carcass where the fillet part or fillet parts is/are at least partly attached to the carcass during passing through the residual fat removal device. The residual fat removal device contains two opposite feathers placed along the poultry carcass passing trajectory from opposite sides of the breast bone of the poultry carcass being treated for residual fat separation from the external sides of the fillet part or fillet parts during the poultry carcass passing.
EFFECT: device improvement.
