FIELD: food industry.
SUBSTANCE: modified lecithins production method involves phosphatide concentrate extraction with ethyl alcohol with formation of an alcohol-soluble and an alcohol-insoluble phospholipid fractions, the alcohol-insoluble fraction separation from the alcohol-soluble fraction; the components are represented by alcohol miscella produced by way of addition of ethyl alcohol, taken in an amount of 20-70% of the phosphatide concentrates weight, to phosphatide concentrates with subsequent filtration at a temperature of 40-78°C; extraction is performed at a ratio of phosphatide concentrates to ethyl alcohol equal to (1:4):(1:15) of the initial phosphatide concentrates weight at a temperature of 40-78°C; after separation the alcohol-soluble and the alcohol-insoluble fractions are dried at a temperature of 60-80°C under residual pressure of 0.005 MPa till the ready product moisture content is equal to no more than 1%; the alcohol-soluble fraction is preliminarily cooled to minus 10°C - plus 15°C and maintained during 6-24 hours.
EFFECT: invention allows to enhance content of physiologically and technologically functional groups of phospholipids in modified lecithins produced.
