FIELD: food industry.
SUBSTANCE: invention relates to whole-grain instant pasta products and dehydrated food compositions including the said pasta products as well as to application of whole-grain wheat flour during production of the said instant pasta products and to a method for the said pasta products production. The dry instant pasta products contain at least 50% of whole-grain wheat groats where at least 95% of wheat groats particles are sized less than 400 microns; the whole-grain wheat groats contain wheat bran, germs and endosperm in the same proportion as in native wheat; the pasta products wall thickness is no more than 0.6 mm. The method for production of the instant pasta products includes the following stages: a) mixing whole-grain wheat groats where at least 95% of wheat groats particles are sized less than 400 microns, the groats containing wheat bran, germs and endosperm in the same proportion as in native wheat, with at least water; b) the mixture extrusion through the extruder dies with wall thickness no more than 0.6 until extruded mass production and c) preliminary thermal treatment of the extruded mass until production of the said instant pasta products.
EFFECT: invention is aimed at development of the said whole-grain instant pasta products.
