FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the milling industry, and concerns the production of whole grain flour. Water-saving and energy-saving method for the continuous production of whole-grain flour and whole-grain gluten-free flour includes preconditioning whole grains or seeds using a solution containing water and sugar and blanching using saturated water vapor. Method also provides for the production of flour, having the form of a bimodal-sized mixture, which is a material characterized by improved viscosity.
EFFECT: whole grain flour and whole grain gluten free flour can be used to make cereal products and baking.
