FIELD: food industry.

SUBSTANCE: invention relates to dairy industry equipment, namely to a device for curd milling and defrosting. The device contains a body where a milling unit and a vacuum chamber are serially positioned, from top to bottom. Positioned in the milling unit are a charging device and the main roller with ellipse-shaped parallel blades. The blades are fixed so that the major axis of the ellipse of each successive blade is perpendicular to the major axis of the previous blade. Installed under the main roller is an additional roller with blades and a stationary blade. A block of frozen curd is cut by the roller blades into longitudinal thin plates. Then curd plates are milled by the blades in a crosswise direction into crumb-sized particles that fall onto the damper and further into the vacuum chamber. Inside the chamber there is a hollow shaft and a hollow auger mixer that communicate with a steam vacuum chamber via collectors. The auger mixer performs curd crumbs stirring and additional heating with steam and, in the course of reverse rotation, product discharge. The charging device ensures the possibility of delivery of non-standard curd clocks and pieces for additional milling.

EFFECT: invention usage will allow to enhance efficiency of curd milling and defrosting processes.
