SUBSTANCE: invention relates to dairy industry. One pasteurises and cools defatted milk. One introduces into obtained milk a standardisation component represented by "Nutrilac QU-7627" milk whey protein concentrate in an amount of 8 wt % of the ready product weight. One maintains the mixture for the components swelling, the mixture is heated up, homogenised in 2 stages, pasteurised and cooled One introduces a starter based on mesophilic lactic streptococci pure cultures. One obtains a clot, stirs and packs it to produce the ready product.
EFFECT: invention ensures increase of the product yield, the product biological and nutritive value increase and the technological production line simplification.
