FIELD: food industry.
SUBSTANCE: invention relates to creation of an improved method for tempering oil-containing tobacco mass. Proposed is a tank (1) for tempering oil-containing tobacco mass, the tank containing a scrapper (2), a mixer (5) and the product circulation tube (10); the mixture contains a section (5) where the width of the blade(s) decreases in the direction towards the tank bottom thus creating a downward flow of oil-containing cocoa mass in the tank. According to the method for tempering oil-containing cocoa mass, temperature is decreased relative to the initial temperature within the range of 53°C - 57°C to the final temperature within the range of 30°C - 34°C within the framework of a single operation in the proposed tank (1).
EFFECT: invention is aimed at creation of a single-operation method for tempering oil-containing tobacco mass.
