FIELD: food industry.
SUBSTANCE: invention relates to thermally stable chocolate, in particular, to that containing conched chocolate having been repeatedly milled in the refiner as well as to such chocolate manufacture method. One proposes a method for manufacture of a thermally stable chocolate product which involves: (a) provision of conched chocolate and (b) the said conched chocolate milling in the refiner to produce a chocolate product, whenever required - the said chocolate product moulding; after final milling of conched chocolate in the refiner, no additional conching stage is performed. Additionally, one proposes a thermally stable chocolate product manufactured by the said method and a thermally stable chocolate product containing conched chocolate having been repeatedly milled; the said conched chocolate having been repeatedly milled in the refiner is represented by chocolate milled in the refiner after conching.
EFFECT: invention allows to produce a thermally stable chocolate product.
