FIELD: food industry.
SUBSTANCE: invention relates to the baking industry. The present invention proposes yeast fit for bread bakery products manufacture with the usage of a large quantity of yeast as well as compositions that may yield bread bakery products containing the said yeast. The said yeast is obtained by way of cultivation of yeast chosen from the group consisting of the yeast strain deposited in the CNCM (Collection Nationale de Cultures de Microorganismes, France) on February 9, 2011 under No I-4445, the yeast strain deposited in the CNCM on February 9, 2011 under No I-4446 and the yeast strain deposited in the CNCM on February 9, 2011 under No I-4447.
EFFECT: proposed yeast allows obtaining ready bread bakery products without the specific yeast savour.
