FIELD: food industry.

SUBSTANCE: invention relates to food industry. Method for production of extruded product of high nutrition value enriched with scorzonera involves preparation of raw material, represented by potato starch, or corn, or wheat or rice or tapioc or mixture thereof, or wheat flour, rye, or potato or maize or their mixture or dry mashed potato in form of flakes or granules, or granulate, or grit, or mixture of various starch-containing material, mixing of raw materials with additive, increasing nutrition value of product, and feeding obtained mixture simultaneously with carbon dioxide in solid phase in two-screw extruder. Additive is represented by dry milled or raw milled scorzonera separately or in mixture with other vegetable raw material in different ratio. Carbon dioxide in solid phase is fed in amount of 0.5 wt%, extrusion is performed at 100-200 °C, screw and working screws rotation frequency of 90-95 min-1. Uncrushed extrudate is encapsulated in sugar syrup, or in salt brine, or sugar-and-juice syrup or sugar-and-fruit drink syrup with subsequent drying.

EFFECT: invention makes it possible to develop highly efficient, cheap method of enrichment of different starch-containing material using method of extrusion.
