SUBSTANCE: invention relates to meat industry, namely to production of cooked sausage products. Method envisages preparation of sausage mince, adding of food additives, moulding, boiling and cooling of sausages. As enriching agents at stage of introduction of food additives into mince components “Seleksena” oil solution is introduced in amount of 0.002 g and aqueous solution of vitamin premix H31249 into poultry meat sausages in amount of 0.07 g or water solution of vitamin premix H30731 in beef and pork sausages in amount of 0.048 g.

EFFECT: production of enriched cooked sausage products with functional properties.
