FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used in production of biologically active food additives. Biologically active food additive includes fresh or frozen whole blood, product of antler deer, ascorbic acid, fruit essence and sugar syrup. Product of antler deer used is an extract, obtained by aqueous extraction of material from a by-product of deer farming in presence of a "Nisin" preparation in amount of 75-100 mg per 1 kg of extracted mass, in following ratio of components, wt%: sugar syrup - 35-40, extracts from by-product of deer farming with "Nisin" - 20-30, fruit essence - 0.35-0.45, ascorbic acid - 0.08-0.1, whole blood - balance. Mixture of sugar syrup, blood, fruit essence and ascorbic acid before mixing with extract is pasteurised at temperature of 52-53 °C for 1.5-2.0 hours.
EFFECT: invention widens range of products based on antler reindeer breeding with high quality properties, with reduced consumption of deer blood and low cost of end product.
