SUBSTANCE: invention relates to dairy industry. Method involves preparation of raw material, introduction of vegetal component, pasteurization, cooling down to fermentation temperature, introduction of starter, calcium chloride, milk-clotting enzyme, stirring, ripening, obtained clot processing, thermization, cooling and packaging, wherein starter contains Lactobacillus bulgaricus and Streptococcus thermophilus, Streptococcus diacetilactis and Bifidobacterium longum, wherein simultaneously with starter "Protamin" biologically active additive and vegetal component are introduced, in form of cooked rice.
EFFECT: invention allows to manufacture product with probiotic properties, enhance preventive properties and biological value and accessibility, reduce energy value and increase product storage life.
