FIELD: food industry.
SUBSTANCE: recipe ingredients are prepared; yacon tubers, aubergines, carrots, onions, zucchini, and Bulgarian pepper are cut, roasted in vegetable oil and chopped. The listed components are mixed at heating with tomato paste, sugar, salt, hot black pepper and allspice. The resulting mixture is packed, sealed and sterilised. The components are used at the following ratio by weight parts: roasted yacon - 550; roasted carrots - 50; roasted aubergines - 80; roasted Bulgarian pepper - 50; roasted onion - 100; roasted zucchini - 50; 30% tomato paste - 75; granulated sugar - 8; table salt - 16; ground black pepper - 0.5; ground allspice - 0.5; vegetable oil - 20.
EFFECT: resulting paste has high consumer and functional properties.
