FIELD: food industry.
SUBSTANCE: marc obtained after separating 40-45% of directly sqweezed apple juice on a screw press are sent to a microwave chamber, where it undergoes preliminary heat treatment under the action of microwave energy. As a result of quick heating, enzymes are inactivated, which prevents marc darkening, and antioxidant activity and microbiological stability are increased as well. After this, the marc is fed to a screw apparatus, in which it is mixed and additionally crushed. Then the resulting ground mass is fed to an IR dryer where the drying process is intensified under the influence of IR radiation, then the dry marc is cooled, and then it is ground into a powder, which is then sieved, passed through magnetic catchers and packaged into kraft bags. The consumption rate of the apple marc with a mass fraction of dry substances of 18% per 1 ton of apple powder with a mass fraction of dry substances of 90% is 4,123.7 kg.
EFFECT: invention allows to obtain a powder that can be used as a biologically active additive to improve the organoleptic quality parameters of bakery, sugary and flour confectionery products and to enrich them with antioxidants - vitamins E and P - and pectin substances and fiber.
